- 2 homemade or ready-made pie crusts (1 bottom & 1 top)
- 5 large apples, peeled, cored, and cubed (approximately 6-7 cups)
- 1 1/2 cups fresh or frozen cranberries
- 1 cup fresh blueberries
- 1/2 cup organic coconut sugar
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon fresh orange or lemon zest
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 tablespoons unsalted butter, cubed
- Egg wash (1 egg beaten with a tablespoon of water or milk)
1. Preheat the oven to 400°F (200°C).
2. Place the bottom pie crust in a pie pan.
3. In a large mixing bowl, combine the apples, cranberries, blueberries, coconut sugar, granulated sugar, cornstarch, orange or lemon zest, cinnamon, nutmeg, and cloves. Mix well to combine.
4. Pour the fruit mixture into the prepared pie crust, and distribute the cubed butter evenly on top.
5. Cover with the top pie crust. You can either decorate the top or make several slits for venting.
6. Brush the top crust with egg wash.
7. Bake for 20 minutes covered with foil to prevent the edges from browning too quickly.
8. Remove the foil, then lower the oven temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the filling is bubbling and the crust is golden brown.
