Decadent Chocolate Bundt Cake

Sharing our @CasaLacsamana Decadent Chocolate Bundt Cake using Organic Coconut Sugar from @krisuglobalgoods.

Ingredients:

- 7 oz bittersweet chocolate, chopped coarse

- 3/4 cup cocoa powder

- 1 tsp instant espresso powder

- 3/4 cup boiling water

- 1 cup sour cream

- 1 3/4 cups all-purpose flour

- 1 tsp baking soda

- A pinch of table salt

- 1 1/2 sticks unsalted butter

- 1 1/2 cups organic coconut sugar (or 2 cups packed light brown sugar)

- 2 tsp vanilla extract

- 5 large eggs

👩‍🍳 Tips: Always use the best ingredients, and make sure all ingredients are at room temperature when preparing the batter.

Instructions:

1. Preheat the oven to 350°F and prepare and grease a 12-cup Bundt pan.

2. Combine the chopped chocolate, cocoa powder, espresso powder, and boiling water. Whisk until smooth.

3. Add the sour cream and whisk to combine. Set aside.

4. Combine all the dry ingredients (flour, baking soda, and salt) and set aside.

5. In a stand mixer, beat the butter, vanilla, and coconut sugar until light and fluffy.

6. Add the eggs one at a time, mixing well after each addition.

7. Slowly add the alternating chocolate mixture and dry ingredients, mixing until just incorporated.

8. Transfer the batter to the prepared pan and lightly tap to release any bubbles.

9. Bake until a tester skewer comes out clean, about 45-55 minutes.

10. Cool the cake in the pan on a wire rack for 15 minutes before unmolding. Let it cool to room temperature.

11. Dust with confectioners' sugar or glaze with chocolate ganache.
