I believe the best part of making sugar cookies is the decorating time; after that, it’s all about enjoying these delightful treats!
- 1 cup (2 sticks) unsalted butter, softened
- 3 ounces cream cheese, softened
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract (or your preferred extract)
- 1 large egg
- 3 cups all-purpose flour
1. Preheat your oven to 375°F (190°C).
2. In a large mixing bowl, use an electric mixer fitted with a paddle attachment to beat the softened butter and cream cheese on medium speed until well combined and smooth.
3. Gradually add the granulated sugar and continue to mix on medium speed until the mixture is light and fluffy, about 2-3 minutes.
4. Add the vanilla extract and egg, mixing on low speed until fully incorporated.
5. Gradually add the flour, one cup at a time. Be sure to scrape down the sides of the bowl after adding each cup. Mix until just combined; be careful not to overmix, as this can make the dough tough.
6. Divide the dough into two equal portions. Flatten each portion into a disk, wrap them in plastic wrap, and refrigerate for at least 2 hours or until the dough is firm.
7. Once chilled, roll out the dough on a lightly floured surface to your desired thickness. Use cookie cutters to cut out shapes and transfer them to a parchment-lined baking sheet.
8. Bake the cookies in the preheated oven for 9 to 11 minutes or until the edges are very lightly browned.
9. Allow the cookies to cool completely on a wire rack. Decorate with royal icing or your favorite frosting if desired.
