Lemon-Lime Shortbread Cookies

Cut out a paper template that resembles a lime or lemon šŸ‹ and dust with powdered sugar for a delightful presentation!Ā 

Ingredients:

- 1 1/2 cups all-purpose flour

- 2/3 cup confectioners’ sugar

- 1/2 cup old-fashioned rolled oats, ground

- 1/4 cup cornstarch

- 1/2 tsp salt

- 1/2 tsp vanilla extract

- 2 sticks (16 Tbsp) unsalted butter, chilled and cut into small cubes

Optional Flavorings:

- Zest of 1 lemon, lime, or orange

- 1-2 tsp grated crystallized ginger

- 1/4 cup shredded coconut

- 1-2 tsp matcha powder

Instructions:

1. Prepare the Dough:

Ā Ā Ā - In a stand mixer fitted with a paddle attachment, mix all dry ingredients (flour, confectioners’ sugar, ground oats, cornstarch, and salt) on low speed until well combined.

Ā Ā Ā - Gradually add the chilled butter, a few pieces at a time, mixing until the dough just comes together. If using, add your chosen optional flavorings during this step.

2. Shape the Cookies:

Ā Ā Ā - Line the collar of a springform pan with parchment paper. Press the dough evenly into the collar using a spatula or the back of a spoon. This will help maintain a round shape while allowing for expansion during baking.

Ā Ā Ā - Once the dough is evenly pressed, carefully open the springform collar but keep it in place during baking.

3. Bake:

   - Preheat your oven to 425°F (220°C). Bake the shortbread on the middle rack for 5 minutes.

   - After 5 minutes, reduce the oven temperature to 250°F (120°C) and continue baking for an additional 12-15 minutes, or until the edges are pale golden.

4. Score and Dry:

Ā Ā Ā - Remove the shortbread from the oven. Using a serrated knife, score the cookie into 8 wedges while it’s still warm.

Ā Ā Ā - Return the scored shortbread to the oven and turn it off. Leave the door slightly propped open to allow moisture to escape, letting the cookies dry for about 1 hour, or until the center is firm.

5. Cool and Serve:

Ā Ā Ā - Once dried, remove the shortbread from the oven and let it cool completely before serving.

   - For an extra touch, sprinkle with powdered sugar before serving. Enjoy! 😊
