Invisible Apple Cake

An easy, delicious cake featuring layers of thinly sliced apples held together by a custard-like batter. The name ‘invisible apple cake’ comes from the way the thinly sliced apple layers seem to disappear into the cake.

Ingredients:

- 3 eggs

- 2/3 cup milk, room temperature

- 3 tablespoons butter, melted

- 1 teaspoon vanilla extract

- 1/2 cup all-purpose flour (or gluten-free flour)

- 1/2 cup powdered sugar

- 3/4 teaspoon cinnamon

- 1 teaspoon baking powder

- 1/4 teaspoon salt

- 4 apples (about 2 lbs), peeled, cored, and thinly sliced

Instructions:

1. Preheat your oven to 350°F (175°C). Prepare a Bundt pan with spray oil/flour or line a loaf pan with parchment paper.

2. In a small bowl, whisk together eggs, milk, melted butter, and vanilla extract. In a separate bowl, combine flour, powdered sugar, cinnamon, baking powder, and salt.

3. Mix the dry and wet ingredients until combined.

4. Gently fold in the thinly sliced apples until they are coated with the batter. Pour the mixture into the prepared pan, spreading it evenly.

5. Transfer the pan to the oven. Bake for 50-60 minutes, or until the top is golden brown and a toothpick inserted comes out clean.

6. Allow the cake to cool in the pan for 10-15 minutes before unmolding.

7. Dust with powdered sugar, cut, and serve. Enjoy!

Notes:

- Use sweet apples such as Fuji, Honeycrisp, Pink Lady, or Golden Delicious.

- Slice apples thinly or use a mandolin slicer for uniformity and convenience.
