Easy Spinach Pesto Sauce

This vibrant pesto sauce is packed with bold and delicious flavors, making it perfect for pasta, sandwiches, or grilled meats and tofu. It’s simple to prepare using readily available ingredients: organic spinach, nuts (such as pine nuts or almonds), garlic, parsley, olive oil, and Parmesan cheese. This classic Italian sauce typically features basil, but here, the spinach adds more nutritional value while providing a delightful twist.

Instructions:

1. In a food processor, combine all of the ingredients and blend until smooth. In just a few minutes, you’ll have a flavorful pesto ready to enhance your dishes.

2. For a deeper flavor, consider toasting the nuts before blending, if time allows.

Ingredients:

- 3 cups organic baby spinach (substitute 2 cups of basil and 1/2 cup of parsley if desired)

- 1/4 cup parsley

- 2 cloves garlic

- 1/2 cup pine nuts (or walnuts, or almonds)

- 1/2 to 3/4 cup extra virgin olive oil

- 1/2 cup freshly grated Romano or Parmesan cheese (reserve some for serving)
