For a vegetarian main dish, fill this golden pumpkin with cooked quinoa, hearty kale, and a nutty, creamy blend of Gruyere and feta cheeses.
1. Prepare the pumpkin by cutting it in half and scooping out the seeds from the cavity.
2. Brush the pumpkin with melted butter and sprinkle with salt.
3. Lightly cover the pumpkin with aluminum foil.
4. Roast in a preheated oven at 400°F for 30 minutes, covered.
5. Remove from the oven and discard the foil.
6. Carefully flip the pumpkin cut side down and continue roasting until it’s tender, about another 25-35 minutes.
7. Once done, stuff the pumpkin with your filling of choice.
